Corn Cobb Smoked Ribs and Game Hens with Hand Crafted American Amber
Seasoned Ribs and Game Hens with Salt, Pepper and Brown Sugar.
Piled unlit briquettes, corn cobs, lit briquettes and cornmeal packet. Heated grill for 5 minutes.
Barbecued meat for 4 hours. Tent and cooled for 30 minutes.
Paired with an American Amber. Grains included Maris Otter, Caramunich, Aromatic, Chocolate and Crystal. Hops included Summit, Columbus and Simcoe. California Ale Yeast did all the work.

Homemade Beef Tacos with Hand Crafted Jalapeño Farmhouse Ale
Sautéed finely Chopped Onion until soft. Added Minced Garlic, Chili Powder, Cumin, Coriander, Cayenne Pepper and Salt to pan and cooked until fragrant. Mixed in Ground Beef. Stirred in Tomato Sauce, Chicken Stock, Vinegar and Brown Sugar. Simmered until thickened.
Fried Corn Tortillas into the shape of Tacos and gathered favorite toppings.
Paired with a Jalapeño Farmhouse Ale. Grains included Belgian Pilsner and Caramel. Hops included Pacific Jade and Spaltz. Belgian Ale Yeast did all the work.

Barbecue Smoked Pork Chops with Hand Crafted American Pale Ale
Soaked Hickory Wood Chips and started the Charcoals.
Simmered Ketchup, Molasses, Grated Onion, Worcestershire Sauce, Dijon, Cider Vinegar and Brown Sugar. Coated the Pork Chops with one quarter of the Sauce and saved the rest for Dinner.
Slowly Barbecued Pork Chops on Grill with Hickory Chips.
Sautéed Fresh Cabbage with Garlic and Ginger. Bakery Bread had to do.
Paired with an American Pale Ale. Grains included American 2-Row, Crystal, Victory and Carapils. Hops included Chinook, Simcoe and Cascade. American Ale Yeast did all the work.

Chicken Tikka Masala with Hand Crafted IPA
Rubbed the Chicken with Salt, Cumin, Coriander and Cayenne Pepper. Dipped the Chicken in a mixture of Yogurt, Oil, Ginger and Garlic. Broiled until done.
Sautéed the Onion until golden. Added Ginger, Garlic, Garam Masala, Tomato Paste and Chopped Serrano Chili. Cooked until fragrant. Mixed in Crushed Tomatoes, Sugar and Salt then simmered. Stirred in Heavy Cream, Chopped Cilantro and Chicken. Served on Basmati Pilaf. Wished we had Flat Bread.
Paired with an IPA. Grains included American 2-Row and Crystal. Chinook Hops. California Ale Yeast did all the work.

Chili Dogs with Hand Crafted American Pale Ale
Prepared the Charcoal Grill and reheated the leftover, homemade Chili.
Chopped some Red Pepper and sliced some Scallions. Shredded some Monterey Jack Cheese.
Grilled the Hot Dogs and Rolls. Topped with Favorite Ingredients.
Paired with an American Pale Ale. Grains included American 2-Row, Crystal, Victory and Carapils. Hops included Chinook and Simcoe. California Ale Yeast did all the work.

Grilled Pizza with Hand Crafted Stout
Combined the Yeast, Honey, Water and Olive Oil. Added the Flour and Salt. Allowed to rise.
Simmered Diced Tomatoes, Olive Oil and Garlic. Prepared Toppings.
Heated and cleaned the Charcoal Grill and placed the stretched Dough onto grate. Flipped once with tongs.
Added Sauce and Toppings, then covered the grill until Crust was golden brown. Cooled slightly and served.
Paired with a Stout. Grains included American 2-Row, Caramel, Chocolate and Black Patent. Hops included Northern Brewer and Fuggle. English Ale Yeast did all the work.

Chocolate Cupcakes with Peanut Butter Frosting with Hand Crafted India Black Ale (IBA)
Creamed the Butter and Sugar with a mixer. Added the Eggs and Vanilla.
In a separate bowl, combined the Flour, Cocoa, Baking Soda and Salt.
Mixed the Buttermilk, Coffee and Sour Cream in a third bowl.
Alternated the Flour and Buttermilk combinations into mixer.
Baked cupcakes and allowed to cool.
Combined Confectioners’ Sugar, Peanut Butter, Butter, Vanilla and Salt. Slowly added Heavy Cream until smooth.
Paired with an IBA. Grains included American 2-Row, Caravienne, Caramunich, Carafa III and Chocolate. Hops included Columbus, Cascade and Centennial. California Ale Yeast did all the work.

Dog Biscuits made with Spent Grains
Mixed the Peanut Butter, Eggs, Flour, Pumpkin and Spent Grains.
Rolled into balls. Pressed with fork and pushed Organic Peanuts into each Biscuit. Baked until dry and crunchy.
Paired with Two Happy Bernese Mountain Dogs.

Pulled Pork Sandwiches with Hand Crafted Porter
Brined the Pork in Sugar, Salt and Liquid Smoke.
Dried the Pork and smothered with Yellow Mustard, Smoked Paprika, Cayenne, Sugar and Salt. Covered with Tin Foil and baked.
Removed excess liquid from pan and mixed with Ketchup, Molasses, Worcester Sauce, Salt and Pepper.
Pulled Pork with a fork and mixed in Sauce.
Paired with a Porter. Grains included American 2-Row, Chocolate, Caramel and Black Patent. Fuggle Hops. English Ale Yeast did all the work.

Mother’s Day Dinner – Lemon and Rosemary Chicken
Marinated the Chicken in Lemon Juice, Olive Oil, Rosemary, Minced Garlic, Lemon Zest, Salt and Pepper.
Prepared the Briquettes and grilled the Chicken.
Sautéed Fresh Corn, Red Onion and Red Pepper in Olive Oil and Butter. Salt and Pepper to taste.
Green Salad and Steak Bread for the sides.
Paired with a Pale Ale. Grains included American 2-Row and Crystal. Hops included Northern Brewer and Cascade. California Ale Yeast did all the work.

Chicago Deep Dish Pizza with Hand Crafted Double IPA
Kneaded the dough and allowed it to rise.
Melted Butter, sautéed the shredded Onion, Salt and Oregano. Added crushed Garlic, crushed Tomatoes and Sugar. Simmered, then removed from heat. Drizzled with Olive Oil and added chopped Basil.
Rolled the Dough and placed it into a cake pan. Covered with fresh Mozzarella, then the Tomato Sauce.
Baked until crust was golden brown.
Paired with a Double IPA. Grains included American 2-Row, Crystal and Carapils. Hops included Columbus, Simcoe and Centennial. California Ale Yeast did all the work.

Mexican Pork Tacos with Hand Crafted IPA
The pork butt was cut into 2″ cubes. Then placed in a Dutch Oven and mixed with Fresh Orange Juice, Orange Rind, Fresh Lime Juice, Cumin, H2O, Onion, Bay Leaf, Oregano, Salt and Pepper.
Slow cooked for two hours. Halved, then broiled until the edges were slightly browned.
Cubed the Avocado, warmed the Tortillas, shredded the Cheddar, sliced the Lettuce, tore the Cilantro and served with Sour Cream. Some store-bought salsa had to do, we forgot the Tomatoes.
